Dry aged steaks

First of all, I love Campo Grande... Great products, nice people good customer service.. I absolutely love every pork product they sell. I tied the dry aged steaks.. I have not tried them all yet...but i believe maybe we should need to grill them for a shorter period of time vs normal steaks.. They just seemed to cook quicker.. The dry age has a different taste.. Not bad, but one I am not sure I expected.. I will try them again soon and let you know....

Exceptional beef

The cuts are small but dense, having been dry-aged to reduce the meat to a delicious essence. Wasn't familiar with the vaca vieja practice of using older cows, but it's as good as advertised (a rare thing these days), and the animals get to live more or less full lives. Which eases one's conscience a bit.

Amazing flavor

Amazing - nothing else like it in the US that I have tasted. The ribeye and strip blew me away. The flank on the other hand was a bit tough — the cut is too thin to lend well to dry aging and I felt like I was eating a flavorful beef jerky. Could also be that I’m not preparing it right. Regardless, will buy again!
