1 . GENETICS

Ibérico Pork comes from the distinctive Black Iberian Pig – also known as “Pata Negra”. It’s actually the same pork whose hind legs retail for up to $4,500 in the form of Spain’s world famous “Jamón Ibérico”. This rare breed from Spain is bred to contain a higher fat content than many other pigs, giving the meat a distinctive marbling similar to Kobe and Wagyu beef.

2 . LIFESTYLE

For true Ibérico perfection, the pigs have to be raised in the right environment and live a happy life. In fact, Ibérico pigs live twice as long as their counterparts. The pigs roam free and eat the local all-natural cuisine. They feed for at least two seasons to help garner that truly distinct flavor.

Delicious anyway you cook it!!

I have served this cut roasted whole, and also cut it into 4 chops for grilling, and both ways were incredibly delicious. Roasting it provides more delectable ribs, which I could eat a whole plate of. When grilling, brushing the chops with Thai sweet chili sauce near the end of cooking time, takes them over the top! Campo's recipe for grilling individual chops suggest 4 min per side on high heat, but on my grill they would have been charred to death. I found that searing them first (1-1.5 min per side) over high heat - or better yet on my cast iron flat top - then moving them off direct heat (400*) and slowly cooking for 5-6 minutes more, produced a perfectly med rare result.

I have ordered the 4 rib packs twice. I slow cooked them on the Big Green Egg with a salt and pepper rub…accompanied this time by a rasberry chipotle glaze——-OMG
