Recipe for Cider-Braised Ibérico Chorizo

Ingredients

  • 2 pack of Campo Grande Ibérico "Chorizo" Sausage, cut into thick slices
  • 1 cup natural cider
  • 1 onion, thinly sliced
  • 2 cloves garlic
  • 2 o 3 bay leaf
  • 1 Teaspoon chili salt, to taste (optional)

Preparation

  1. Heat a large skillet over medium heat. Cook the chorizo for 5 minutes, stirring occasionally, until browned and it releases its fat.Remove the chorizo and set aside.
  2. In the same pan, add the onions and cook over medium heat for 10-12 minutes, until golden and soft. Add the garlic and the bay leaf cook for 1 more minute.
  3. Return the chorizo to the skillet, along with the cider.Increase the heat to medium-high and bring to a boil.Lower the heat to low and let it simmer for 10-12 minutes, until the cider reduces and slightly thickens.
  4. season chili salt to taste. If you don't want it spicy just add regular salt.Serve hot in a small dish or cazuela, with rustic bread for dipping.
