Ingredients
- 1 pack Campo Grande 4-bone ribeye rack
- 8 oz green beans
- 3.5 oz feta cheese
- 1 tsp mustard
- 1 tsp tahini
- juice of half a lemon
- 1 tbsp chopped parsley and garlic
- Salt, black pepper, and olive oil to taste
- Mint leaves
- 2 tbsp nuts or peanuts
- 1 tbsp pomegranate seeds
Preparation
- Preheat the oven to 350°F.Prepare the rib rack by seasoning with salt and freshly ground black pepper on all sides. Let it rest for 10 minutes.
- Place the seasoned rib rack on a baking tray and cook in the preheated oven at 350°F for approximately 30-40 minutes or until the internal temperature reaches 145°F. The general rule is 1 hour of cooking at 350°F for each kilogram of meat.
- For the green beans, in a frying pan with a splash of oil, lightly fry them for a few minutes. Add chopped garlic and parsley and fry for a few more minutes until they are crispy. Avoid overcooking.
- For the feta cream, in a container, combine feta cheese, mayonnaise, tahini, juice of half a lemon, salt, pepper, and olive oil to taste. Mash everything until you get a paste.
- Once the rib rack is cooked to the desired point, remove it from the oven and let it rest for about 5-10 minutes. Then, portion it.
