Oven baked pork chops with green beans feta garnish

Ingredients

  • 1 pack Campo Grande 4-bone ribeye rack
  • 8 oz green beans
  • 3.5 oz feta cheese
  • 1 tsp mustard
  • 1 tsp tahini
  • juice of half a lemon
  • 1 tbsp chopped parsley and garlic
  • Salt, black pepper, and olive oil to taste
  • Mint leaves
  • 2 tbsp nuts or peanuts
  • 1 tbsp pomegranate seeds

Preparation

  1. Preheat the oven to 350°F.Prepare the rib rack by seasoning with salt and freshly ground black pepper on all sides. Let it rest for 10 minutes.
  2. Place the seasoned rib rack on a baking tray and cook in the preheated oven at 350°F for approximately 30-40 minutes or until the internal temperature reaches 145°F. The general rule is 1 hour of cooking at 350°F for each kilogram of meat.
  3. For the green beans, in a frying pan with a splash of oil, lightly fry them for a few minutes. Add chopped garlic and parsley and fry for a few more minutes until they are crispy. Avoid overcooking.
  4. For the feta cream, in a container, combine feta cheese, mayonnaise, tahini, juice of half a lemon, salt, pepper, and olive oil to taste. Mash everything until you get a paste.
  5. Once the rib rack is cooked to the desired point, remove it from the oven and let it rest for about 5-10 minutes. Then, portion it.
  6. For plating, serve 2 ribs and add a few tablespoons of the feta cream on top of the green beans. Sprinkle with nuts, pomegranate seeds, and mint leaves. Adjust the flavor with a splash of oil, salt, and pepper if necessary. Enjoy!
