Recipe for Quick Boneless Shoulder Roast fried rice

Ingredients

  • 4 cups minced roasted Boneless Shoulder Roast
  • 4 cups cooked rice (preferably day-old)
  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots, thawed
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 green onions, sliced

Preparation

  1. Prepare the Roast Boneless Shoulder. You can find the recipe on our blog, where we provide a simple guide on how to cook it.  
  2. Heat the oil in a large skillet or wok over medium-high heat.Add the diced onion and cook until softened, about 3 minutes.Add the garlic and cook for another minute.
  3. Add the peas and carrots to the skillet and cook for 2-3 minutes until heated through.
  4. Push the vegetables to one side of the skillet and pour the beaten eggs into the other side.Scramble the eggs until fully cooked, then mix them with the vegetables.
  5. Add the minced pork and cooked rice to the skillet.Pour the soy sauce over the top and stir to combine everything evenly.
  6. Cook for another 3-5 minutes, stirring occasionally, until everything is heated through and well-mixed.
  7. Garnish with sliced green onions and serve hot.que aproveche!
