- 4 cups minced roasted Boneless Shoulder Roast
- 4 cups cooked rice (preferably day-old)
- 2 tablespoons vegetable oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup frozen peas and carrots, thawed
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 2 green onions, sliced
