- 1 pack of Campo Grande Loin Bacon
- 2 Bagels, halved
- ½ cup Cream Cheese
- 1 tbsp Fresh Chives, finely chopped
- 1 tsp Dijon Mustard
- 3 large Eggs
- 1 cup Arugula
- Salt and Pepper (to taste)
- Olive Oil for cooking
