How to Cook Entrana (Skirt Steak) 

You will get the best results if you can cook the skirt steak on a grill. Using pans on the stovetop or an oven just don’t give the same results. It’s also easier to cook on the grill because you can keep an eye on it and take it off the heat as soon as it has reached the temperature you want. It’s also easier to use a meat thermometer if you are cooking on a grill, so you don’t have to open up the oven door and reach your hand inside. 

If you want to cook it on the stovetop though, make sure you use a cast iron pan. This will help to retain the juices and will keep the mighty beef flavor inside the steak. No matter how you cook it though, cook it on very high heat for just a few minutes. 

On high heat, you only need to cook each side for a few minutes. Before putting it on the grill, you can also soak it in a marinade to give it more flavor. Skirt steak is very easy to marinate. Remember that it easily absorbs any kind of flavor you soak it into, so make sure your marinade is not too strong or too light. 

Most people recommend you cook the Skirt Steak medium-rare to medium, but you can cook it to whatever temperature you prefer. When you are done grilling or cooking it, let it cool for a few minutes and then cut it against the grain.

  • Salt allows for the other flavors of the marinade to soak in easier. It allows for the flavors to get deeper inside the meat. It will also break down the muscle fibers.

  • Acid will weaken the fibers of the meat and make the flavor stronger. Too much acidic sauce though will make it mushy and dry. 

What Kind of Marinade Should I Use?

Marinade is very important when it comes to Skirt Steak. If you aren’t sure what to use, here is a simple and easy marinade to help you get started.

Ingredients needed:

Soy Sauce

Gives the steak a mild umami flavor

Olive Oil

Skirt Steak always needs a little moisture

Garlic

Make sure to use fresh if you can, but jarred will also work in a pinch

Salt and pepper

Add as much as you need to taste

Red pepper

You only need a little bit unless you enjoy super spicy meat

Italian seasoning 

You can make your own, or buy a jar from the store 

Lemon juice

Helps to add in a little acid and the flavor breaks the fibers in the meat 

Worcestershire sauce 

Combines well with the soy sauce, but don’t use too much


How to make the Steak Marinade

Gather the ingredients above. You will also need a small bowl, a whisk, and some Ziploc bags. In a small bowl add in the soy sauce, olive oil, Worcestershire sauce, Italian seasoning, pepper, salt, minced garlic, lemon juice, and the red pepper. 

Place the steaks into a Ziploc bag and pour the marinade on top. It needs to sit for at least 2 hours, but you can leave it overnight if you need to.
