Grilled Iberian pork with orange sauce

The Iberian secreto is a cut of meat that is highly prized for its juiciness and intense flavor. In this recipe, we take it to another level by grilling it and accompanying it with a delicious orange sauce. The contrast between the tender meat and the citric acidity of the dressing creates a perfect combination.

Ingredients

  • 500 g of Iberian secret.
  • Salt and pepper to taste.
  • Extra virgin olive oil.
  • 2 oranges, squeezed.
  • 1 tablespoon of honey.
  • 1 tablespoon of mustard.
  • 1 tablespoon soy sauce.

Preparation

  • Prepare the orange sauce by mixing the juice of the squeezed oranges, honey, mustard, and soy sauce in a bowl. Set aside.
  • Season the secreto iberico on both sides with salt and pepper.
  • Heat the grill to medium-high heat and brush the surface with olive oil.
  • Place the secreto ibérico on the grill and cook for 4-5 minutes on each side until golden brown is cooked to the desired doneness.
  • Remove the secreto ibérico from the grill and rest for a few minutes.
  • Cut the meat into slices and serve with the orange sauce on top.

Iberian sirloin steak with Pedro Ximenez

One of the best cuts of Iberian pork available. Combined with the unique flavor that Pedro Ximénez wine can bring, you can delight yourself with the authentic Spanish taste.

Ingredients

  • Iberian pork tenderloin.
  • Salt and pepper to taste.
  • Extra virgin olive oil.
  • 200 ml Pedro Ximénez wine.
  • 100 ml of meat stock.
  • 2 spoonfuls of honey.
  • 1 onion, cut into julienne strips.
  • 2 cloves of garlic, chopped.

Preparation

  • Season the Iberian pork tenderloin with salt and pepper on all sides.
  • Heat a little olive oil in a large skillet over medium-high heat.
  • Searing the tenderloin: Add the tenderloin to the hot pan and brown on all sides until golden brown.
  • Remove the tenderloin from the pan and let it rest while you prepare the sauce.
  • Add the onion and garlic to the same pan and cook until golden brown and caramelized.
  • Add the Pedro Ximénez wine and let it reduce for a few minutes.
  • Add the beef broth and honey to the pan and mix well.
  • Return the sirloin to the pan and cook over medium-low heat for 15-20 minutes or until cooked but still juicy in the center.
  • Remove the sirloin from the pan and let it rest for a few minutes before slicing.
  • Serve the sirloin with the sauce on top and serve with baked potatoes or a fresh salad.

Iberian ham croquettes

Finally, we present this incredible recipe for crispy croquettes, easy to make and loaded with the unique juiciness of the Iberian pork.

Ingredients

  • 200 g of Iberian ham, finely chopped.
  • 50 g butter.
  • 50 g flour.
  • 500 ml milk.
  • Salt, pepper, and nutmeg to taste.
  • Bread crumbs.
  • Beaten egg.
  • Olive oil for frying.

Preparation

  • In a skillet, melt the butter over medium heat.
  • Add the flour and mix well until you obtain a homogeneous paste.
  • Add the milk little by little, stirring constantly to avoid lumps.
  • Cook the mixture over medium-low heat until it thickens and you obtain a smooth béchamel sauce.
  • Add the chopped Iberian ham to the béchamel sauce and mix well.
  • Season the mixture with salt, pepper, and nutmeg to taste.
  • Pour the mixture into a bowl and chill in the refrigerator for at least 2 hours or until firm.
  • Form the croquettes with the chilled mixture, dipping them first in breadcrumbs, then in beaten egg, and then in breadcrumbs.
  • Heat plenty of olive oil in a frying pan over medium-high heat.
  • Fry the croquettes in the hot oil until golden brown and crispy.
  • Remove the croquettes from the oil and place them on paper towels to remove excess oil.
  • Serve the Iberian ham croquettes as an appetizer or an accompaniment to your main dishes.
  • Serve the secreto ibérico with baked potatoes or a fresh salad.
