Ingredients

  • Six large eggs.
  • Four slices of bacon.
  • Freshly ground black pepper.
  • Coarse salt.
  • Fresh parsley.
  • Half an onion.
  • Extra virgin olive oil.
  • A splash of milk.

Elaboration

  • Heat a drizzle of extra virgin olive oil in a large frying pan. Lower the heat and add the pancetta when the oil is very hot but without burning.
  • The pancetta must be at room temperature.
  • You have two options: serve the pancetta in slices or scramble them with the egg. It all depends on how you like it best!
  • If you cut the pancetta into small cubes, throw it into the pan and season with a pinch of salt and pepper.
  • Stir so that the pancetta is well done on all sides.
  • Meanwhile, break the eggs into a bowl and beat them with a fork. Add salt and pepper, as well as a splash of milk.
  • Peel and finely chop the onion and add it to the eggs while stirring.
  • Add the eggs and onion to the pan when the bacon turns golden brown.
  • Stir all the ingredients well.
  • Turn off the heat and remove the pan when the egg is done.

Tips for preparing delicious eggs with bacon and onions

There are several ways to prepare this delicious recipe. The first is to scramble the eggs with the pancetta and cut them into pieces. But it is also possible to grill the bacon and remove it from the heat, so it does not mix with the eggs. In this case, please take advantage of the juice released by the bacon to cook the eggs here and give them a different flavor.

As for the onion, you can also choose when to prepare it. If you like it a little raw, then it will be enough to stir it directly with the eggs to flavor the dish. But if you want it a bit more cooked, we recommend you chop it finely and add it to the pan with the bacon.

Add the egg to the mixture when the onion becomes transparent, and you remove the bacon from the heat.

On the other hand, scrambled eggs are much tastier if they have a slightly more liquid consistency. How to achieve this? In this case, keeping the egg on the heat for a short time is best. You can even turn off the heat when you add the egg so that it cooks only with the heat of the frying pan. This is a good alternative!

Yes! We want to tell you that making a delicious omelet with pancetta and onion is possible. Here's how. The ingredients are the same that you have used in the scrambled eggs, but instead of making the traditional scrambled eggs, we are going to prepare them in a delicious French omelet.

You need to peel and finely chop the onion and cut the bacon into small pieces to do this. These ingredients are mixed in the frying pan until the bacon is done and the onion is transparent, then remove from the heat.

The preparation of the eggs (beaten and seasoned with salt and pepper) is similar. When you remove the pancetta and onion, pour the egg into the frying pan and let it expand. It is advisable to add a little oil to prevent the egg from sticking. Add the pancetta and onion on top when the egg starts to set.
