Recipe for Spanish-Inspired Wagyu Brisket sandwich with Manchego cheese
Ingredients
- 24 oz smoked Wagyu brisket, sliced thin. Check the recipe
- 6 sandwich slices
- 6 oz Manchego cheese, grated
- 3 onions, caramelized
- 3 tablespoons pickles, chopped
- 5 tablespoons mayonnaise
- 3 teaspoons Dijon mustard
- 1 1/2 teaspoons smoked paprika (Pimentón de la Vera)

In a small bowl, mix mayonnaise, Dijon mustard, and smoked paprika. Stir in chopped pickles and a little diced raw onion if desired.

Slice onions thin, cook in a pan over low heat with 1 teaspoon oil or butter until golden and sweet for about 30 minutes. You can add a bit of sugar and balsamic vinegar.

Lightly butter or oil the buns and toast on a pan or grill until golden.

Spread smoky mayo on both bun halves. Layer sliced brisket, Manchego cheese, caramelized onions, and any extra pickles on the bottom bun. Top with the other half.
