The Iberian secreto pork is one of the most coveted cuts by lovers of good cuisine. It is a type of meat with an excellent flavour, easy to prepare, and has multiple benefits for the human body. Discover them!

Why eat Iberian Secreto Pork?

The iberian pork secreto provides excellent health benefits. Although the consumption of red meat is recommended to be limited, some experts consider that this meat can be compared to lean meat. However, if you are going to eat secreto ibérico, avoid overeating and clean the meat well to remove fatty streaks. Pigs fed on acorns have fat-rich meat, giving it its unique flavour and a lot of juices derived from cooking. But why eat secreto ibérico?

This cut of meat is rich in unsaturated fatty acids, as well as oleic acid. Moderate intake of this meat (eating it twice a month is not harmful) has advantages for the cardiovascular system because, believe it or not, it helps to reduce the levels of bad cholesterol in the blood while raising the levels of good cholesterol.

On the other hand, iberian pork has high levels of protein, and minerals such as potassium, iron and zinc, which contribute to your daily energy. It provides high doses of vitamins B6, B12, riboflavin and niacin, which reduce the chances of contracting diseases such as anaemia. Finally, iberian pork is rich in antioxidants, which fight free radicals in the body.

How to prepare Ibérico Secreto Pork?

One of the advantages of iberian pork, apart from its flavour and texture, is that it is so versatile that it can be prepared in many ways - the pork can be baked, grilled, roasted, grilled or fried. Try it however you like! You will not need many ingredients in whichever version you choose to cook, as the secreto already has an unbeatable flavour.

No matter which cooking method you choose, the ibérico secreto pork is made in the same way; with more or less heat and more or less time, but always the same!

Ingredients

  • A cut of iberian secreto pork. It can be whole or in fillets.
  • Coarse salt.
  • Freshly ground black pepper.
  • Extra virgin olive oil.

Preparation

You can prepare the ibérico secreto pork by cooking the whole piece or in fillets. Bear in mind that the fillets will take much less time. Ask the butcher to fillet or do it yourself, but try to cut the pieces to the same thickness.

If you prepare the secreto in steaks, leave the meat out of the fridge for a couple of hours. This way, the meat will not be cold inside when cooking, and the flavour will be different.

Heat the skillet, frying pan or grill to maximum temperature; preheat the oven to 200 degrees if using this method.

Bring the meat to a boil. If grilling is the quickest and easiest way, season the meat with salt and pepper and grill on both sides for three to four minutes.

If you prepare the meat on the skillet or in a frying pan, it is advised to grease it with a bit of extra virgin olive oil.

When the meat is prepared in the oven, you will require much more cooking time. After seasoning, place the meat in a special ovenproof dish or pan and cover it with aluminium foil. Note that preparing the whole piece in the oven will take much longer. You will need about 30-40 minutes for the meat to be done. The time also varies depending on the size of the cut and the degree of doneness you like. If you bake it in the oven, add a drizzle of extra virgin olive oil on top for extra flavour!

What to serve with Iberian cured pork sausage?

There are infinite recipes to accompany iberian pork, so find the one you like best! You can eat it on its own, grilled, accompanied by the side of chips, and it will be more than enough; you can also serve piquillo peppers or rice as a garnish and even good guacamole.

If you want something more elaborate for this recipe, prepare a good salsa. For example, a good alternative is a blue cheese sauce, mushroom sauce, or a Pedro Ximénez reduction sauce. The ibérico secreto pork does not need any special cooking. The only laborious part is making the sauce of your choice and coating the meat with it once it is ready - do not forget to cut bread for your guests if you decide to serve the secreto with sauce!

Ibérico secreto pork can even be eaten as tostas, which are very popular and ideal for a special occasion! An accompaniment that gives the ibérico secreto pork a unique touch is caramelised onion. Place the secreto on artisan bread with caramelised onion and goat's cheese, if you like, and enjoy!
