WHAT IS IBÉRICO SECRETO?
Secreto is the Spanish butcher's best-kept secret, and for good reason. Tucked behind the shoulder, only two can be taken from each pig, so it's always been a small, prized cut, the kind butchers used to keep for themselves instead of selling.
Visually, it looks something like a skirt steak: long, and flat. But a better comparison is a ribeye cap steak, that dark, marbled strip just under the fat cap. Secreto is essentially a whole cut of that: heavily marbled, deeply flavorful, and so tender it barely needs any help from you in the kitchen.
TIPS FOR SEASONING SECRETO
Secreto's marbling means it holds onto moisture even with minimal seasoning, so simple always wins here. Start with just salt, added whenever you like (before, during, or after cooking), since this cut won't dry out the way leaner cuts can.
MARINADES
Secreto's fat renders so fast on its own that a marinade is more about layering in flavor than tenderizing. A quick soak, 30 minutes is plenty, in citrus, garlic, and herbs adds brightness without covering up the pork. RUBS & GLAZES
A dry rub before searing is an easy way to build a crust. Black pepper, smoked paprika, garlic powder, and a little brown sugar all hold up well against the richness of the fat. For something with more shine, a mustard-based glaze, like in Secreto Ibérico with Mustard, works especially well since the sharpness cuts right through.
BASTING
Since Secreto cooks so fast over high heat, basting is a great way to build extra flavor in just a couple minutes. Melt butter with garlic and rosemary in the pan as the Secreto sears, then spoon it over the meat continuously for the last minute of cook time.
HOW TO COOK IBÉRICO SECRETO
Secreto's high fat content makes it forgiving and hard to mess up, but it's also thin enough that it goes from perfect to overdone fast. No matter the method, aim for medium-rare: an internal temperature of 140–145ºF. A little pink is the goal, not a mistake.
ON THE GRILL
Get your grill to high, direct heat. Cook 2–3 minutes per side, until well-charred on the outside and rosy in the middle.
No thermometer? Cook 1 to 1.5 minutes per side for every centimeter of thickness.
ON THE STOVE
A cast iron pan is ideal here. Get it screaming hot, no oil needed since the fat renders as it cooks, and sear 2–3 minutes per side. Rest 3–5 minutes before slicing against the grain.
No thermometer? Same rule as the grill: 1 to 1.5 minutes per side for every centimeter of thickness.
IN THE OVEN
For a more tender, hands-off result, place the Secreto in a covered, oven-proof dish with a little olive oil. Cook low and slow until it reaches 140ºF internal, then remove and sear in a hot pan for about a minute per side to finish. This takes longer but produces an especially tender result, good for feeding a crowd without babysitting the stove.
SOUS VIDE
Set your sous vide to 131ºF, add the Secreto with a little salt and a sprig of herbs to the bag, and cook for about 1.5 to 2 hours. Remove and sear in a hot skillet or on the grill for a minute per side to finish.
